Mom’s Pumpkin Bread
I grew up in a family that loves to bake. Still to this day, at family gatherings, the dessert selections almost always outnumber the dinner selections. This is just how we roll. I love to bake, but during this season with small kids it doesn’t happen as often as I would like for it to, so I am sharing one of our favorite family recipes in hopes that others will get to enjoy its deliciousness — my Mom’s pumpkin bread. When this gets made, my mom usually makes 6 loaves and they are demolished so quickly. It’s that good. If you’re looking for a good pumpkin recipe to add to your home, I promise this is one worth trying!
Mom’s Pumpkin Bread Recipe
4 cups flour
3 cups sugar
3 tsp baking soda
1 ½ tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 cup olive oil
⅔ cup water
4 eggs
1 (16 oz) can pumpkin
Blend dry ingredients and set aside. Beat eggs and add sugar. Mix well and add olive oil, water and pumpkin. Slowly add dry ingredients and mix well.
Grease and flour 3 regular bread pans. You can also add walnuts, pecans or chocolate chips if you would like, but I like to keep it plain. Bake at 350 for an hour or until a toothpick comes out clean.
